Cookie Crust:
1/2 cup flour
1 tbsp. packed brown sugar
1/4 cup margarine
1/4 cup chopped peanuts (optional)
Pie Filling:
1/2 pkg. banana instant pudding mix
1 cup milk
Assembly:
1 banana
1 cup Cool Whip
chopped peanuts (optional)
Directions:
Cookie Crunch -
1. Heat oven to 350.
2. Mix flour and sugar in a large bowl.
3. Using pastry blender (or your hands), cut in margarine until mixture is crumbly.
4. Sitr in peanuts.
5. Press evenly against the bottom of an ungreased pie plate.
6. Bake approximately 12 minutes or until light brown.
7. Stir to break it up. Cool completely. Pie Filling -
1. Blend pudding mix and milk with a whisk.
2. Place in refrigerator. Assembly -
1. In small bowls, assemble:
- 1st layer - cookie crunch
- 2nd layer - pudding
- 3rd layer - banana, sliced
- 4th layer - Cool Whip
2. Cover and refrigerate.
3. Top with peanuts. Serve.

You can buy the banana pudding powder in bulk and use 1/4 cup in place of 1/2 pkg.
